Westerly Packing Company posted a picture last week of some corned beef hash created by Mr. Jim Kirker. I had not had corned beef hash in years so decided to head over and get some.
I know a lot of people serve corned beef hash under an egg, but we wanted to do something a little different. We decided to make pastry pockets using pre-made puff pastry. This recipe couldn’t be easier. Even the skeptic in our family loved these! Great for lunch or a quick snack later in the day, the filling was delicious! We served ours with a cabbage, apple and walnut salad.
