With the Super Bowl just a few days away, it is time to start thinking about what you will be eating while you watch. If you are heading out you might want to stop in at Voc’s Dunn’s Corners Pizza where they are showing the big game. If you are staying in or going to a party why not bring something easy and fun? Starting with hassle back baked potatoes, these little guys are easy and perfect for that one bite finger food size that is great for parties. Start with the smallest fingerlings you can find. Using a sharp knife slowly slice 3/4 of the way down the short side of the potato until you have about five or six slices. Toss with olive oil, salt and pepper and bake in a 400 degree oven for about twenty minutes. When potato is cooked through remove from oven- and add sliced cheddar. We used Jansal Valley’s Session Cheddar. The taste of the beer in the cheese is to die for. Once inserted we popped these back in the oven for about five minutes- until the cheese was oozing. They came out and were topped with chopped bacon, sour cream and chives. The perfect little potato popper!
Our second favorite Pinterest party food find were these skewered cheese balls. So easy to make simply by combining 1 brick of cream cheese, 1 small log of goat cheese, 1 tablespoon of paprika, salt and pepper into a food processor and pulsing until combined. The cheese mixture was rolled into ball shapes and put in the fridge for about an hour to set. When they came out they were rolled in a mixture of parsley and bacon before a pretzel stick was inserted into an end. Helpful tip: insert the pretzel stick right before serving, otherwise the end in the cheese gets soggy. Also- less is more! Make the balls about the size of a quarter and it will be just the right amount of cheese for that yummy party size snack.
Finally, we love a stuffed mushroom done classically but this fun version was so easy we couldn’t pass it up. Starting with baby bella mushrooms we popped off the stems and slightly pan fried the tops and bottoms in a small frying pan before adding tiny cubes of triple cream brie and bacon to the insides and putting them in a 375 oven for about ten minutes or until the cheese is oozing. Could this be any easier?
