For our final gluten free lunch to go post we headed over to Sandy’s Fine Food Emporium where we left with a batch of zucchini spinach soup and a bag of Laiki Rice Crackers. This was the perfect combination for a cool and possibly rainy day and so easy to heat up and enjoy at home. The batches are very large so you can split it four ways or have enough to enjoy again later in the week. We gave the crackers a try and are so glad we did. Made of black rice, oil and salt they are crunchy and flavorful and went perfectly with the soup. The soup itself was full of flavor. Nothing could have been better for a dreary day.
